Chocolate Coconut Bliss Bites
Today I created an amazing little morsal of bliss! Please feel free to add your own variations!
For one serving:
In a food processor or blender mix:
*1/2 cup dried unsweetened shredded coconut until it begins to stick to the sides.
*add 2 or 3 brazil nuts, or any nuts you prefer
*add 1 tablespoon of chocolate chips (I use pascha brand as they are completely organic and free of any other additives). I use 100% unsweetened cacao. I prefer to add liquid stevia so I don't spike my blood sugar, but you can use whatever sweeter you prefer. You can use chocolate chips that have sugar added if you like.
*add 5 or 6 drops liquid stevia or other sweetners to taste (I like Sweetleaf brand vanilla cream flavor).
Blend all ingredients to a doughy consistency. I like some chunks of chocolate chips left in the dough.
Put a sheet of parchment paper or wax paper on a plate and spoon out about 4 little cookies from the dough. Place in the freezer for 5 minutes or longer and voila, you have amazingly delectable bites of bliss...Enjoy!
