Coconut Avocado Pudding
This pudding will satisfy you so much that you will not want to munch on anything else. I eat a serving at night when I want to eat for emotional reasons or bordom, and I notice that I don’t want anything else!
Makes 4 servings
Pudding:
2 large avocados or 3 medium avocados
1/2 t vanilla
1/2 cup full fat coconut milk
20 drops liquid stevia or to taste
Mix all ingredients in a food processor until smooth and creamy
Topping:
1/2 cup raw cashews
1/2 t vanilla
1/3 cup full fat coconut milk or more if you need more liquid
6 drops liquid stevia
Mix all ingredients in a blender until smooth.
Serve in parfait cups layer avocado mixture with fresh berries and top with cashew cream. This is a yummy rich dessert that will satisfy your sweet tooth and fill you with healthy, beneficial fats. Enjoy!!!
Variation: You can add raw powdered cacao for a chocolate treat. Mix 1 to 2 tablespoons of powder with avocado mixture. Taste to see how much cacao (chocolate) you want.
Another variation is to use the pudding as a pie filling. Just add some coconut oil to help the pudding be more firm and keep refrigerated until you're ready to serve.
