A very tasty, healthy and beautiful red and green festive salad for the holiday season.
This amount makes about 4 servings:
1 fresh red beet
1 small granny smith apple
1 inch piece of fresh ginger
1/4 cup of fresh chopped cilantro
1/2 organic lemon, juice and rind
2 Tbs. olive oil
2Tbs apple cider vinegar with the mother
1/4 cup chopped walnuts or pecans
Use food processor or grate by hand the beet, carrots, apple, ginger and lemon rind. Mix in a bowl and add chopped cilantro, lemon juice, olive oil and apple cider vinegar. Let sit to mingle flavors and add nuts before serving. Enjoy!
