This candy creation reminds me of halvah, the Turkish candy I ate as a child. It has a rich and satisfying flavor and texture. I use organic brown sesame seeds. The quickest way to prepare the seeds is to roast them in the oven. If you want to preserve the enzymes and make a raw food version, soak the seeds for about 6 hours and then dehydrate. I found that I can dehydrate in my oven on warm. This does take several hours until the seeds are completely dry. Either roasted or dehydrated, the seeds have a much richer flavor prepared in these ways rather than raw.
For about 4 servings, roast one cup of sesame seeds on 300 degrees for about 12 minutes. Take out and cool briefly.
Mix in food processor sesame seeds, 1 tablespoon of either organic cocoa powder or organic carob powder (I like raw carob powder. Use more or less to satisfy your taste ), or you can mix the two for lite caffeine, 1 teaspoon of cinnamon, 1-2 teaspoons of vanilla extract, and 1 tablespoon of virgin organic coconut oil, and liquid stevia to taste. I use about 15 drops for this amount. My favorite stevia is SweetLeaf.
Mix until the consistency is thick and gooey. You can either roll into little bite sized balls, or pat into a flat pan. Either way, the mixture is best when put in the freezer to harden for about an hour. Then it will have a firm and rich texture. These are my honey's favorite - Enjoy!
FYI - Sesame seeds are very low in Cholesterol and Sodium. They are a good source of Calcium, Iron, Magnesium and Phosphorus, and a very good source of Copper and Manganese.
